We all love fried rice. It's one of the simpler, yet tastier meals anyone will enjoy. This one is my very own vegetarian version made using red rice. In this version, I've used carrot, beans, baby corn, sweet corn, and bell peppers, but you may use any veggies you enjoy. What I love the most about this recipe is the unique flavor profile of the dish, the delicate sweet touch from the red rice when mixed with stir-fried vegetables.
Ingredients
2 TBSP WASHED AND CLEANED CAULIFLOWER FLORETS
1/2 CUP VEGETABLES (Carrot, Beans, Baby corn, Sweet Corn, Bell peppers)
1.50 CUP COOKED RED RICE
2 TBSP TIMPERIO NOBILE EXTRA VIRGIN OLIVE OIL (Alternatively, you may use Timperio Gentile or Timperio Organic Bio/Olio)
1 TSP TIMPERIO BASIL FLAVORED DRESSING
1 TBSP CHOPPED FRESH BASIL
2 PINCH SALT
Directions
Heat Timperio EVOO in large nonstick pan over low to medium-heat. Add the Cauliflower and cook them until their edges start to brown, stirring occasionally (Approximately 3 to 5 in).
Add the mixed veggies to the pan, and cook for a few more minutes (2-4 minutes), over medium-heat.
Sprinkle Salt, and add the pre-cooked red rice. Stir fry for 3-5 minutes over high flame, stir regularly.
Sprinkle Timperio Basil Flavored Olive Oil Dressing, fresh Basil on top and serve it hot.
